How to Make Clear Ice at Home

Ice from a typical freezer tray is cloudy and melts fast — which dilutes your whiskey, cocktail, or wine far quicker than you'd like. Clear ice melts much more slowly and barely changes the flavor of your drink. Here's why, and how to make it at home.
Why is your ice cube tray's ice cloudy?
A standard ice tray freezes water from every direction at once. Dissolved air and minerals have nowhere to escape, so they get trapped at the center of the cube, forming that familiar white cloud. That structure, full of tiny air pockets, also makes the ice more brittle — it cracks easily and melts faster.
The principle: directional freezing
Clear ice is made by forcing water to freeze in a single direction instead of from every side. Air and impurities get pushed ahead of the freezing front as it advances, rather than getting trapped in the middle. The result is a dense, bubble-free block of ice that melts roughly twice as slowly as a regular cube.
It's the same principle used by high-end bars and brands like Wintersmith's or True Cubes — without the professional equipment.
The cooler method (the most accessible)
- Use a styrofoam or standard camping cooler, left open. The insulation on the sides and bottom forces the ice to freeze only from the top down, which creates the directional effect.
- Fill it with filtered or boiled-then-cooled water — fewer impurities to start with means clearer ice.
- Place the open cooler in the freezer for 18 to 24 hours.
- The top portion of the block will be clear; the bottom third or quarter will stay cloudy (that's where the impurities collected). Cut away and keep only the clear portion.
- Cut to the size you need with a bread knife or ice pick, working quickly so the block doesn't crack from the heat of your hands.
The insulated ice mold method

Water freezes top-down inside an insulated chamber, and the cloudy portion forms in a separate reservoir that you simply remove before unmolding.

The most common mistakes
- Covering the container. An airtight lid lets ice freeze from multiple sides at once, which cancels out the effect you're after.
- Using unfiltered tap water. Chlorine and dissolved minerals can slightly dull the final result, even with the right technique.
- Unmolding too soon. Ice that hasn't fully set cracks easily when handled.
- Ignoring freezer temperature. A freezer that's too cold (below -20°C / -4°F) speeds up freezing from every direction and weakens the directional effect — a setting around -15°C to -18°C (5°F to 0°F) usually gives better results.
Why it matters for flavor
The faster a cube melts, the more water it releases into your glass. With a well-balanced whiskey or cocktail, that rapid dilution can wash out subtle flavors within minutes. Dense, slow-melting ice keeps your drink cold without drowning it — which is why so many cocktail bars invest time in this step, one that's invisible to the customer but changes everything in the glass.
